60 quintals per hectare

HARVEST PERIOD:
mid October, by hand, selecting the best bunches of grapes

VINIFICAZIONE:
Rasping and maceration are followed by a pre-fermentation maceration at 10°C for 48 hours.Selected yeasts are then introduced to induce fermentation, including the skins, for 18 days. Racking and soft pressing at 0.2 bar with a yield of 65%. The wine ends its malolactic fermentation the following Spring and is then transferred to wooden barrels for 10 months of maturation.

PROCESSING:
The wine has undergone protein stabilisation without refrigeration.

AGEING:
at least 6 months, bottled

TASTE:
A dense red colour with an inpenetrable texture and an intense fruity aroma of small red fruit. The taste is an elegant balance of tart tannin which gives a sensation of warmth and softness.

PAIRING:
Pair with red and roasted meat, cured meats and mature cheese. Serve at 18°C, opening the bottle one hour before serving.
