SUMMER SCORZONE TRUFFLE AND WINTER SCORZONE TRUFFLE

“Tuber aestivum Vitt. – Tuber Uncinatum”
On a gastronomic level both the Summer Scorzone and Winter scorzone truffles are sharply increasing in popularity and on a commercial level they are much more appreciated than in the past. In the best conditions it can be as big as an egg and its smooth surface ranges from an ocra yellow to orangey colour and at times even dark brown. When ripe, the glebe is dark with decisive white veining and its scent is intense with garlic notes. These particular species of truffles grow in sandy mixed soils next to coniferous, broad-leaved and herbaceous plants. They are harvested from the end of winter through to spring.
