HARVEST PERIOD:
end of September - by hand

VINIFICAZIONE:
Rasping and maceration are followed by fermentation, including the skins, for about one week. Racking, soft pressing and the end of fermentation take place at a temperature of 18 to 20 °C, bringing out and maximising its fruity tones.

PROCESSING:
The wine has undergone protein stabilisation.

AGEING:
at least 1 month, bottled

TASTE:
A ruby red colour with violet highlights. A fruity fragrance with a smooth, zesty taste.

PAIRING:
Ideal with red pasta dishes, cured meat and mature cheese. Serve at 18° C.
