WHITE TRUFFLE or MARZUOLO

On a gastronomic level, the Bianchetto white truffle or Marzuolo is becoming more and more popular and on a commercial level it is much more appreciated than in the past. In the best conditions it can be as big as an egg and its smooth surface ranges from an ocra yellow to orangey colour and at times even dark brown. When ripe, the glebe is dark with decisive white veining and its scent is intense with garlic notes. This particular species of truffle grows in sandy mixed soils next to coniferous, broad-leaved and herbaceous plants. It is harvested from the end of winter through to spring.
