SELECT BLACK TRUFFLE

“Tuber Melanosporum Vittadini”
Finest among the black truffels, it plays a leading role in international cuisine. It is round and even in appearance when it grows in loose, sandy soil. When found in other types of soil it can be uneven and lumpy. Its black surface has small, rusty shaded, warty zones. The browny-black glebe has subtle white veining which turns into an ocra colour through oxidisation when the glebe is exposed to the air. Its scent is intense and yet delicate at the same time and the aroma is fruity with a note of honey. It is born and grows in symbiosis with Hazels, Oaks and Hornbeams well exposed to sunlight and can be observed in sparse, dry grass. It is harvested from December to March.
