WHITE TRUFFLES

“Tuber Magnatum Pico”
The white truffle, thanks to its important commercial value, is considered to be a diamond from the earth and is equal to the White Alba Truffle. This variety of truffle, of uneven shape, in the best conditions and very rare cases, can weigh up to 400g -500g each; globe like in appearance, its external surface is smooth and slightly velvety with a colour that ranges from ivory to dark cream through to a greenish colour. The inside, called a glebe, shows a range of colours that vary from pale yellow to light pink and from ash grey to light brown with subtle white veining. The intense aroma is unique and unmistakable of its kind. The white truffle is born thanks to the symbiosis it establishes with tall trunked trees such as oaks, willows and poplars; this will determine the colour of the glebe and the intensity of its aroma.
